Jonathan Pabiot’s estate Pouilly-Fume is a lesson in mouth-filling, aromatic Savvy B; without the exams, so just come along for the ride. 20% has been aged in oak, and all spent 12-18 months on lees to fill out lavish aromatics and textures of green apple, grapefruit and pear, playing on the palate with crystalline minerality… plus a little grass and flint.
