In Soave we trust. Farmed traditionally along the terraced slopes of the Montesei vineyard sites, these old, old vines have been fed by the porous, volcanic, clay and silt soils for up to 9 decades. You don't need to do much to such quality fruit; hand-pick, basket press, no malo, just a few months on fine lees. The outcome is a softly fruited, floral nosed, shatteringly crisp Soave with the expected bitter almond finish.
