Two years to ferment. Forty-six months in a single 1,500-litre foudre. This isn't winemaking, it's geology. François Rousset-Martin's Vigne aux Dames pushes further into Jura's oxidative tradition than his leaner, more electric Côtes du Jura cuvées, built from yields as low as 2,500 kilos a hectare and left to find its own time. The result: Comté rind, mushroom, a faint earthiness, all wrapped around a fine-boned, salty-charged palate that stays light despite sitting close to 14%. Only 2,000 bottles.
