François Rousset-Martin has stints in Burgundy on his CV, and his laser-focused Chardonnay from the limestone slopes of Château-Chalon displays the influence. Not the traditional, oxidative style you might think of from Jura, but something snappier and electrifying. Candied lemon, kiwi, beeswax and toasted sesame. The palate’s all precision and length, underpinned by bright, racy acid and a savoury balance. In other words, an absolute belter from 65-year-old vines in the 0.4ha La Chaux parcel.
