Why we love this Wine
Aligoté that refuses to behave like Aligoté. François Rousset-Martin is a Jura man through and through, spontaneous ferments, indigenous yeast, a 300-year-old cellar doing half the work, but this fruit comes from one hectare of grey marl in Bouzeron, planted in 1980. Too far from home for Burgundy's rules, so it wears Vin de France instead. Forget the citric snap you expect: pale gold, fleshy orchard fruit, grilled nuts and autolysis, salted butter. Laser focus with Jura's exotic streak running through it. Cult for a reason.
