We are big fans of Col Fondo, now known as ‘Sui Lieviti’ because, you know…. Italian wine laws are weird. The Dal Zotto clan in Victoria’s King Valley are not weird. They are lovely and their cracking, cloudy, leesy Col Fondo Prosecco is a glimpse into how the style was made in the past and we reckon that sometimes, it’s a pretty good idea to look back at the past.
