This Chablis basically orders the oysters for you. Dry as a bone, with acid slightly tempered, this is classic Chablis; mineral led with toasted grassiness and an aromatic fruit-basket of stone-fruit, citrus and honey complexity. Christophe Patrice uses low density vine planting and Guyot pruning to cultivate fruit of high-def quality, and it translates to the glass. BYO tiny fork.
