From a tucked-away, southwest-facing slope in Moonambel, this Latta release draws its shape from shattered quartz and ironstone soils and old vines planted in the mid ’70s.Fermented wild in Austrian oak and left on full lees for a year (no stirring, no fuss), it’s all about structure and purity. Think bright citrus and green apple, a flash of white peach, a hint of herbs — wrapped around saline acidit. Not shouty Sauv. Just very, very good.

Sauvignon Blanc is so back, and this charmer from Gentle Folk is a pure expression of the Adelaide Hills. Drawn from simply superb vineyards in the heart of Piccadilly and Balhannah, this is barrel-fermented and undergoes full malolactic fermentation. Bright but subtly creamy, the fruit is pressed as whole clusters to tank overnight, then racked to neutral French barriques and hogsheads. Citrus, orchard fruits, a recipe for dreamy days.
