Why we love this Wine

Pure pedigree Blanc de Blancs. 100% Clone 124 Chardonnay, originating in Burgundy, considered the bee's knees for sparkling wines due to its large, abundant bunches. Think fine flavour, high acid. Whole-bunch pressed to old oak, before a secondary fermentation in the bottle one year later, and five years ageing on lees. It's caught one heck of a bouquet in that time: acacia honey, yellow fruit, toasted nuts, morning buns. Lengthy on the palate, this is a cut above the rest. Fizz to remember long after it's gone.
