Why we love this interesting drink
Do we fancy a wee sherry? On occasion, we do indeed, and on such occasions, reaching for something medium-dry (for sherry that is) with only about 30g of residual sugar allows appreciation of the nuanced flavour profile. Amontillado with 5% Pedro Ximénez, aged around 8 years under flor, then a further 8 in solera. This is dessert or digestif; caramello koalas, fig jam, hazelnut creme. Darker notes of burnt sugar, candied citrus and the softest suggestion of wood. Fermented in butt, a practice largely unique to Valdespino (don't be childish).
