The humble Tarrango. Basically a science-project of the CSIRO, who posited that if you made a crossbreed of Portuguese grape Touriga, with the humble Aussie Sultana, you could craft a wine-grape that retains "Champagne-levels" of acid, even in the face of merciless Aussie summers. Laura and Brendan Carter have unleashed this nature-defying supergrape, picking early and bottling fresh to keep it super zingy, sour and bright. Drink-this-season, watermelon bursty. Bury deep in ice, pull out just as you get sick of beers, just before you pull a beach cricket hammy.
