Why we love this interesting drink
Natural wine's got its orange wines and wild ferments — sake has bodaimoto, a technique lifted from a Nara temple monk, older and rowdier than anything modern brewing ever tidied up. Terada Honke's been at this since the 1670s in Chiba, but the last few decades saw them ditch industrial shortcuts entirely — native yeast, zero additives, nothing but rice, water and patience left to do the work. Cloudy in the glass, full-bodied, acid running high and loud — orange peel, honey, pickled ume, a citrus tang that never quite settles down.
