Paterna isn't a winery so much as a working farm-commune at the foot of the Pratomagno mountains near Arezzo β olives, vegetables, cheese and wine all coming off the same land, organic since the seventies, and run in part through social agriculture, giving people with disabilities a real stake in the vineyard and cellar. The Colli Aretini Chianti is 90% Sangiovese with a splash of Canaiolo and Colorino del Valdarno, hand-picked, ten days on skins in steel, fermented on native yeast and left mostly alone. Sour cherry, tomato leaf, a dusting of pepper. Chianti with a conscience.
