Why we love this Wine
There are many ways to skin a cat, and even more to finesse a Fiano. This one from Ox Hardy uses a cultured yeast and a cool-temp ferment in stainless to the point of sugar dryness. Thereafter the lees are stirred through weekly to give a gorgeous textured mouthfeel. Grapefruit rind, crisp apple, a little blossom on the nose. Lovely linger, a la The Cranberries.
