Oratoire St Martin’s Haut Coustias is biodynamic, drawn from 75-year-old vines on the steepest, chalkiest slopes of Cairanne’s La Montagne. 30% each Clairette, Roussanne, Marsanne, 10% Grenache Blanc — each vinified separately in concrete eggs or old foudre before blending. Texture, ripe pear, peach skin, anise, all lifted by natural phenolics and a bright, mineral spine. A white Rhône with Burgundy-befitting elegance.
