Why we love this interesting drink
From one of the first ever female Toji in Japan, this is a unique sake made using an ancient red rice strain from Kuniko Mukai's hometown of Ine. Bold. Mankai translates to 'In Full Bloom', reflecting the harmonious balance of acidity and sweetness. We can picture drinking this under the cherry blossoms in a Tokyo spring. Sweet and sour morello cherry and an umami savoury richness. Revel in it.
