Sébastien Mouzon farms 60 biodynamic parcels across the flint-heavy slopes of Verzy in the Montagne de Reims. L’Atavique pulls together Chardonnay from chalky eastern valleys and Pinot Noir from deeper clay soils to build a house cuvée with serious shape and precision. North-east exposure keeps everything taut and mineral. Delicate bead, pale gold, lifted citrus and orchard fruit, with a great salty-flinty line. Disgorged non-dosé, which is to say bone dry on the finish and razor clean. Very smart fizz.
