Desert meets sea in a glass. Dario Serrentino’s Val di Noto farm sits at North African latitudes, a few kilometres from the Ionian coast — and you can taste both. The Ponente is his reserve Grillo, named after the westerly wind that keeps the vines honest. Two days skin contact, 18 months concrete, zero fuss. Chalky, briny, tightly wound. Citrus rind, grilled nuts, a long salt finish.
