Additions at a minimum, but winemaking that does the most. This bodacious blend sees a mixed bag of white grapes soaked on skins for two days and pressed to stainless steel just as the wild ferment starts to kick off properly. Then an in-barrel ferment with daily stirring, combined in tank, aged back in barrel for complete malo and a little batonnage. To arrive here; dry, lifted, skinzy, stonefruit. All apricots, peaches, and lovely times.
