Minimum wine does the most. 48-hour skin soaked Sauvignon Blanc gets blended in with the first harvest of newly planted Mataro— hand harvested early, and whole-bunch pressed for minimal (there it is) colour extraction. It's not quite water into wine, but white wine from red grapes always feels like its own special miracle. Especially like this, when it's crisp and textural, with delicate fruit flavours. Orange sherbet, stewed apples. A great hang.
