Let's talk about diurnal swing (ooh, sexy). Daily fluctuations in temperature (ie. when the sun sets early and cool air pools in the Forreston Valley) arrest the ripening process. Fruit develops serious complexity and elegance. Apply the ancestral method to craft Pétillant Naturel and one might extract some serious flavour: blood orange, pink grapefruit, electric orange peels. Eliza and Tosh at Lansdowne are bubbly wine dynamos, packing in the confectionary notes atop a crisp, dry base. Sauvignon Blanc plus a little Pinot Noir. Go-go juice.
