What is there to say about the Chablis that has it all? Purists can rejoice. This is 100% unoaked, fermented instead in concrete and stainless. What speaks instead is the subtle lees-built textural component. With a cooler vintage in 2022, this resulting wine is poised and fresh. Think bright herbs, blossom, citrus and a little minerally edge. Apply liberally wherever a Petit Chablis shines; alongside shellfish, with cheeses, on a boat preferred.
