Why we love this Wine

Usually low in alcohol and high in acidity and minerality. The stuff dreams are made of, right? Bottled after 4 months ageing and retaining a bit of CO2 from the fermentation, it shows of ripe citrus, almond, pear and granny smith, yet the palate is dry and round. Interesting and so delicate.
