James Erskine's Jauma runs on native yeast, zero additives, gravity over machinery — farming and making wine the slow way in the Adelaide Hills.
Extended skin time turns this from bright white to something amber, textured, savoury. Waxy lemon, dried apricot, a faint grip of tannin holding the finish. Cloudy, alive, unpolished.
