Parellada and just a little Macabeo, by way of Sant Sadurní d'Anoia, D.O. Penedès. We love the faint green reflects in this otherwise yellow-gold drop, hinting at the fresh-to-death nose that's to come. Green apple zap, lime zest, something sappy. A little floral. Basically all the freshness of a mountain spring in one beautiful bottle, tingling and alive with the softest fizz. High-altitude vines, currently being transitioned toward organic and biodynamic practice. If you like your bubbly light, dry and enthusiastic, here ya go.
