This is a deep cut from France's endless library of traditional aromatic liqueurs, the pride of Provence for those in the know. Anise based, Distillerie Garagaï draw on a host of locally cultivated aromatics and 'erbs, both wild and cultivated across Sainte-Victoire in the Bouches-du-Rhône. Each is macerated and distilled in isolation, then autumn sees the blending of one potent potion: licorice, wild thyme, fennel, Marseilles basil, mugwort, dill, hyssop, rosemary, tarragon... and more, but how much time have you got?
