Spicy, saline and mineral, François Rousset-Martin continues to impress us with his unconventional range of Côtes du Jura whites. They're lean and structured, this 2020 Savagnin especially, a far cry from the chewier, oxidative styles you'll find from more traditional producers in the region. Citric, even a little smokey, the 2020 Savagnin boasts all the complexity you'd hope for out of Château Chalon, one of Jura's most venerable terroirs.
