Here today, gone tomorrow— François Rousset-Martin's Ephemere Savagnin gets a longer maceration on skins (translating to a shorter time in the glass, this baby's stupid good). We genuinely didn't know it was possible to get aroma like this out of Savagnin. Red fruits, cherry blossom, pears, and are we just imagining the bucolic foothills of Jura? Fresh and precise, well-worth airing (give it a couple of hours) and well-worth sharing (don't be selfish).
