"One part winemaking, three parts magic." A big call, but not one we're going to challenge, the proof sits in the pud. Soils in Chavignol promise a steely, mineral-rich edge to François Cotat's Sauvignon Blanc. This is a Sancerre that drinks with racy exuberance while young, but will yield creme brulee indulgence if afforded a few years. There's full orchard flavour here, a hint of honeysuckle sweetness, zest and some pear.
