They say pressure makes diamonds— this is outrageously delicious Victorian Chardonnay born of a challenging growing season. Farmed with strict organic practice, fruit was whole bunch pressed to 300L hogsheads for a wild ferment with indigenous yeast. Full malo, check. Then racked to stainless to settle, leaving behind a rich, golden elixir replete with toffee, green apples and a lick of saline minerality. Chardy-heads form an orderly line.
