Serious Tassie fizz. Dr Edge’s Blanc de Noirs comes off a single Tamar Valley vineyard—mostly Pinot Noir with a dash (4%) of Pinot Meunier. Proper traditional method: tirage June 2020, then five years resting on lees before a 'Brut Nature' disgorge in Feb 2025. Bone dry, yes—but not skinny on detail. Loads of texture, fine bead, and savoury Pinot depth underneath the citrus and red-apple. A proper prestige drop, built for a celebration now, or to stash a few more years.
