Why we love this Wine

This was my edit: Old-school Emilia fizz, zero pretense, all pep. Camillo Donati and wife Francesca practise minimal intervention farming on their 15-hectare estate in Groppone, Parma (Emilia-Romagna). Their Frizzante starts with organically farmed Malvasia di Candia Aromatica. As suggested, it's stupidly aromatic stuff. Two days on skins, wild ferment in tank, then a second ferment in bottle—tradish-traditional, no shortcuts. You get bursting peach, pear, green apple, so much citrus. Fine bubbles, bright acid, and that faintly bitter almond twist so iconic of Malvasia. Dry and lively, best with salty snacks.
