A moment please. For the Burgundy-nerds, here's something rare and exceptional, 100% Chardonnay from Savigny. This unique terroir produces prized white wines that are fruity and rich, though only 10% of the region's vineyards are planted to Chardonnay. The Savigny-les-Beaune blends fruit from two plots, one flat and one mounted on a sloping hillside. One part is fermented under temperature control in stainless steel, while the remaining juice ferments in oak barrels with weekly lees-stirring. The resulting wine is rich and ripe, with stunning minerality. Juice that's well worth the squeeze.
