Sauternes gets all the glory for sweet wine. Jurançon's been doing it longer, quieter, tucked into the foothills of the Pyrenees, no château required.
Henri Ramonteu's run Domaine Cauhapé since 1980 on one stubborn idea: chase the taste, nothing flashier.
100% Petit Manseng, picked late into October, briefly macerated on its skins before a cool ferment in steel and eight months resting on lees. Sweet, but never soft in the head — citrus and ripe tropical fruit up front, a spiced gingerbread edge underneath, all held together by proper acid. Silky through the middle, long finish that keeps its shape.
