Granitic Yarra soil lays the blueprint for the Chardy complexity you seek. Wet stone, white blossom, rich lemon juice, pastry, all teased out in the winery by the clever Luke Lambert. A little time on French (and stainless) plus 100% malolactic fermentation. Left on its full lees for six months; the occasional stir. No fining or filtering. Hits the spot all day long!
