Why we love this Wine

From a cool, frost-prone site at the top of the Tue-Boeuf estate, this is a neat three-way split of Sauvignon Blanc, Chardonnay and Fié Gris (aka Sauvignon Gris, a lesser-known cousin to the Blanc). Old vines on sticky clay and flint see a hand-harvest, and then a very hands-off approach to winemaking. The bunches remain as whole clusters, partly destemmed, receiving 2-3 days of maceration to kick off the spontaneous fermentation. The approach is sans-sulfur in large oak tanks. The wine ages 8-9 months on lees in used demi-muids and Burgundy barrels. An occasional stir, but otherwise that's it. Intricate, stunningly fresh and canonically 'of the Loire'.
