Christophe Patrice grew his patch from five hectares in 2006 to twenty-two today, all old vines, all stainless steel — no oak, no distractions, just Chablis logic without the Chablis label.
Whole-bunch pressed, wild ferment, kept cool and unhurried. Then the trick: lees from his actual Chablis get folded in, lending weight and depth this cuvee wouldn't get alone. Racked off, four months in tank, no malo, no shortcuts. Citrus and orchard fruit up front, a chalky, saline edge underneath — generous on entry, precise on the finish.
