Why we love this Wine
Aussie Fiano always overdelivers, with food (recommended, why not?) or without. Its natural acid guarantees refreshment and zip, and when grown at elevation as the Corsini family do in the Upper King Valley, it takes on stacks of cool climate character. Chris Catlow presses whole bunches, letting it settle before allowing wild fermentation to occur in a combination of stainless steel hogsheads, Clayver (sandstone fermenters), and Byron Bay ceramic eggs. Palest gold in colour, the nose is fresh as a mountain meadow. Crushed gravel and fennel seed come through, a little lemon-lime sherbert. Finishing bitter and a little biting, but in the best of ways.
