Domaine Metrat (of Chiroubles) favour hand harvesting, whole-bunch ferments with natural yeasts and ageing across a combination of concrete, stainless steel and older barrels. The Coudriere harnesses all the charm of Gamay—red-violet fruits and granitic minerality. The Moulin a Vent Cru (named for the nearby windmill) has a high concentration of manganese in the soil, imparting distinctive identity and firm character. Mushrooms, tobacco, spice. Belter.
