Why we love this Wine

Prosecco done a little Prosexier. Pet-Nat style, with the secondary ferment done in bottle. Lemony, a little tropical, with tart, sour apple notes. Softly textural, dry as a bone. Come for the minerals, stay for the tantalising acids. Undisgorged, it's up to you whether to disturb that little bit of yeast sediment for a cloudier funk, or take care when pouring to let it settle.
