This one's inspired by Chartreuse and its shelf of European herbal secrets — except there's no monastery involved, just a shed in northeast Victoria and a chef with too much time on his hands during lockdown. Michael Ryan built Beechworth Bitters after stepping back temporarily from his restaurant during COVID lockdowns to finally chase a long-held interest in bitters. In the Weeds is the deep end of that obsession — fifty ingredients going into this one, the most complex thing he makes, though one of the easier to produce. Nettle, dandelion, citrus leaves, gum leaves and other herbs foraged or grown around Beechworth go into the maceration. The result is green, mentholated, herbal, with spice and bitterness holding the sweetness in check. Weeds never looked this good.
