Pale copper, barely there. Redcurrant and fennel seed up front, air-dried ham and bay leaf underneath, strawberries-and-cream sneaking in on the palate. Light pressing kept it pure; lees ageing in old oak added the savoury weight. A cool, shut-down finish to the season left the aromatics quiet, so a splash of other varieties got folded in for lift and texture.
