Col fondo means "with the bottom" — this one finishes its second ferment in the bottle and never gets disgorged, so the lees stay put at the bottom to adda bit of texture and fun. No dosage, no polish, no apology.
Both Trebbiano and Riesling wear the col fondo thing well — lime, green apple, a chalky, bready lees hum underneath. Bone dry, faintly cloudy, all the tension Riesling's known for with Trebbiano texture.
