Why we love this Wine
First release from a brand new sparkling program, and the goal was simple: build a proper méthode Champenoise that can hold its own against anything in the country. Equal parts Chardonnay, Pinot Noir and Meunier from Clare Burder's high-altitude Whitlands vineyard (originally scoutedfor bubbles by sparkling heavyweight Möet). Riper picking, harder pressing, a nip of perpetual solera folded through for savoury depth. Citrus, white peach, toasty lees creaminess. Get amongst it and watch this space.
