Sommeliers don't usually pick up secateurs. Liam O'Brien did — trading wine lists for vine rows, running the whole thing like a training camp: no shortcuts, no polish for polish's sake.
Mostly Trebbiano (85%), topped up with a field blend of central and southern Italian varieties, this one refuses to pick a lane — semi-aromatic, semi-savoury, textural throughout. Just-ripe apricot, tarragon, almond and frangipani drift over citrus drive and soft yellow fruit. Light and lithe beginning, mid-weight middle, with a grip that closes the whole thing out.
