Pat’s rise has been quick. In less than a decade, his Chardonnays have become some of the country’s most sought-after. He’s firmly in the great wines are grown, not made camp—studying viticulture over winemaking and spending most of his time where it matters: in the dirt. A philosophy that led him to Gippsland’s ancient volcanic soils in the Baw Baw Shire, where he planted Tumblestone Farm in 2013.
These days, he’s all in on Chardonnay, sourcing from Gippsland, the Upper Yarra, Henty and the Limestone Coast—each site shaped by cool climates and serious minerality. Look, the man doesn’t miss.
