Up in Piccadilly Valley, Lucy and Xavier are working with fruit that doesn’t need much convincing. The Bizot Vineyard—planted in the mid-90s and still very much pulling its weight—sets the tone. High, cool, and built on ancient shale. Everything’s done by hand—cane pruning, hand picking, the canopy shaped through the season to get the light just right. No need to dress it up. It’s already doing all the talking.
