Why we love this Wine
This is a Chardonnay that made us recommit to Chardonnay. Hand-picked then chilled overnight before being whole-bunch pressed direct into barrel. A wild ferment sounds super funky, yet the wine is surprisingly restrained. Flavour builds and intensifies; white peach, melon, citrus, cashew. All that action is bridled by the most quenching acid that makes it very hard to stop at one glass.
