Taking fruit from the Barossa Valley's iconic Vine Vale, the juice sits over whole bunches for 21 days before being pressed to fibreglass. We're left with the Merlot of the future; pure, plummy and plush. For all that it may not be the Merlot of your grandfather's table, it should certainly appear on yours.
