Mysterious Diggings pulls a magic trick — Pinot Noir grapes, pressed off their skins before they get the chance to turn red, so all that colour and tannin just... vanishes.
Terra Sancta farm this patch of Bannockburn (on Felton Road, no less) the slow way — organic, regenerative, a permanent flock of sheep doing the mowing. Less about control, more about not getting in the way.
Grapefruit, honeysuckle and lime pith up front, white peach and mandarin blossom drifting underneath, a chalky, saline grip holding it together. High-energy fruit doing its own thing. Sleight of hand, not a shortcut.
